I'm with you. I canned bone in chicken thighs over a year ago and loved them for their tenderness and wonderful flavor. Today at the grocery, they had large packages of bone in thighs or legs on a buy one get one of equal or lesser value for free. Guess what I'll do tomorrow.

Curious. Did you pack them raw or cooked?

Raw for mine. Followed approved method. I just did the pints with two in each because there is just me. So nice to grab out a jar when you want a quick meal and add whatever you want. Did you do a raw pack, Lucille?

Yes I did a raw pack. I used quart jars, I bought leg quarters at around 50 cents/lb at Walmart and they were big legs which is why I used the widemouth quart jars, but they were plenty tender and delicious after processing.

Still, can someone explain what you're talking about? I am down to feeding only me and the canned thighs sound interesting.
