I like the galley if that is a giant island and there's a walkway around it from right side of your image. If it's not an island -- keep the basic layout. Good luck!!

Keep the same layout. You gain nothing, in fact, you're actually losing cabinets and countertop space, with that galley layout.

Keep the current layout. When you install the new header, make the fridge "cavity" 36 inches deep x 45 inches wide. This will allow for any large fridge and proper air circulation. The rest of the wall can be a big pantry with sliding doors...you won't need any upper cabinets at all.
