Actually genrally there is a Sheet put above this for water protection or it could be a metal sheet as well and under it bamboo sheets are used for the beautification and the look of the patio .

There are commercial DIY products that are supposed to keep the water out - Drylock or Thompsons Water Sealer come to my mind. You could give those a try.

This is not a roof but a shading screen. To make bamboo roofing waterproof you can do it with bamboo poles cut in half an placed them in a similar fashion as clay roofing tiles - the U shaped half pieces with legs up are covered with upside down pieces to cover the joint.
