I wonder why the electrician is telling you that...it was very simple to move and patch up ceiling lights/pendants in my kitchen, they did it twice after deciding I wanted a different sized island and you can’t even tell. But yes, it would not look good to have outlet plates between them. I agree to look at a linear fixture - there are some beautiful ones. My reading shows the contractor said this. He may not be the electrician. There are guys who say everything except what they think is easy for them is difficult and too expensive. Get an electrician to quote the job. Pay for what you want. . . . Lighting is important for work surfaces. 450 lumens at the counter is recommended. Make sure you get that without shadow interference. Ambient room lighting is different.
