Where are you located? if you have a Sunset Guide Garden book, it will tell you what you can plant in your zone. If not too cold and rainy, I'd suggest succulent garden.

I think mini evergreen bush or a thorn bush.

go to your local nursery or look online to see what plants deer don't like. plant those. Foxglove and Dianthus are two.

you can also use larger rocks or boulders and dark mulch for visual interest.

don't forget some colorful pots for the flowers the deer won't nibble.
