Yes, they will be safe as long as they stay in the fridge. I've used the Mrs. Wages kosher dill mix on lots of veggies including mixed peppers, cauliflower, and cukes. Is there a reason that you don't want to do a BWB? By the way the packets call for 3 1/3 cups vinegar and 7 1/3 cup water. There is citric acid included in the mix which allows for the lower amount of vinegar compared to water.

Just wanted a crisper pickle. I did the BWB with the first batch and they are a little less crisp. Someone said to put pickle crisp in them next time but wasn't sure if the packets contained it already.
I also quarted the pickles next time I think I will half them.

I'm pretty sure Mrs. Wages does not include pickle crisp. You can check the ingredients for calcium chloride. It does help a great deal. My MW pickles stay crisp for at least 18 months using 1/4 tsp. per quart. I do whole, spears, and chips.
