old beets are flavorless

I put in my beets in November, and start harvesting in March. Got them through the summer. They're fantastic. I just pulled the last of them, almost a year old. They were remnants that were hiding in the bed. Gee, they look OK, but when you cook them, the have ZERO taste. I guess the taste of beets - mainly the sugars probably - disappear after a while. Is that true of other flavorful root crops?
