In the smaller niche add wooden shelves and use it for spices, powder products like flours and baking stuff etc.

The larger L shaped area, add racks and use dividers or baskets to organize food stuff etc.

I would call california closets or another closet organizer company to consult.

I did this with my pantry and they came up with some brilliant ideas. Of course they will only share the plans with you if you buy from them (which is only fair). I consulted with them on my laundry and they were excellent on that too. However I just used them for my pantry And my contractor did my laundry (which was not as precision planned as the CC designer). There is no obligation but it might be worth the time to talk them.
