New raised veggie bed - what should I use for soil?

I've just acquired a couple of 6' x 3' fabric raised beds to start a veggie garden here in the San Francisco Bay Area (USDA 9B/Sunset 15). What should I fill them with?

My local nursery has 1.5 cf bags of E.B. Stone organic potting/raised bed mix ("Regionally Sourced Bark, Coir, Compost, Pumice, Earthworm Castings, Aged Chicken Manure and Mycorrhizae"), but it's a little pricey for the amount I need.

Any other suggestions? I want to keep it organic, and I don't mind having to mix up a bunch of stuff myself. I'm not looking for super-cheap, but if I could save $100 I'd be thrilled.

Thanks!
