It's quartersawn white oak according to the captions. Something like Bona Naturale waterborne was used for the finish. Anything oil-based will yellow, so you want to go with waterborne, and Bona is one of the best out there, their Naturale collection. You also have to be careful about how this stuff is applied to prevent tannin pull in white oak. Get an installer and finisher who has worked with white oak a lot. I forget the process exactly, but I think you have to do a thick first layer or something to seal in the tannins, not too watered down. I'd recommend more research on preventing tannin pull. It's a problem with white oak and not so much with red oak. White oak has more tannins and the wrong process can pull them to the surface and cause dark brown blotches.
