Help with Mortar

HELP! Our Horizon Stone fieldstone was mortared six days ago. This gable was completely mortared on the same day. We live in the Midwest: the temperature reached 73 degrees the day it was completed and got down to 49 that night. The following day got up to 79. It rained a couple of days after it was completed. I know weather does play a part in the curing process, but I can't imagine it would have made this much of a difference.

I realize mortar takes time to cure, but how long does it typically take for the mortar to achieve its final color? Our gable has looked exactly the same for the past few days, so I feel like the final color is going to vary quite a bit. We also have stone underneath our porch and it is darker, but has some areas of variation. FYI: our mortar color is just standard gray.

Does anyone have any recommendations? I've read about using muriatic acid as well as articles about staining the mortar. Can anyone share tips or photos?
