If I were doing freezer drawers, I'd rather have 2 than one. The food gets stacked so high that it's a little hard to manage the deeper ones. However, if you are really short on space, you'll get more cubic square feet of storage with just one drawer. Sometimes the units have leveling legs that can go up or down. If you are merely an inch away from your desired height, perhaps something could be done to adjust. Many of these appliances have reviews online in various places for the specific model you are researching, so you can read reviews about that unit in particular to get an idea of what to expect.

Also I want to add that I think Sub-Zero has a 24" deep refrigerator/freezer combo unit that is 81" high if you have the budget for that.
