What is the style of the home? Sometimes that influences the selection of details. Your selection is a bit more complicated than Shaker

I know that small ogee detail doesn't seem like much, but when it occurs door after door after door, all those shadow lines start to add up and the kitchen begins to look very busy visually.

We are updating our traditional home with greige colors but with definite warmth. I don't like the stark white, and I enjoy contrast. I'm including these mullions...a little bit of an expense but love the look, even though I have a fairly small kitchen compared to the ones I've seen with mullions.

My current doors are 13" wide and will be expanded to full overlay. Would you do 3" raised outside panels instead of 2.5"?

Those muntins need VERY specific door proportions or you get completely wrong circle proportions. You get ellipses. Or big fat blobby looks. Sometimes both. And all the doors have to be equal size. Muntins are where a lot of people go badly wrong. They look really bad in small suburban tract homes.

What you’re describing is not Shaker, by any stretch. Shaker is simple, straight lines. No ogee, anywhere.

Those mullions are fussy, and outdated.

If you are getting full overlay don’t get a profile- it ruins the illusion. Get it exactly like the sample you have- it just has an eased (slightly rounded) corner.

Your pics is inset, and you never do profiles doors with inset or you get excessive gapping. Just like with full overlay. It increases the gap appearance. Sculptured outer profiles take away from the full overlay look.

And you’d better check your clearances thoroughly. There’s a reason that this isn’t often done, and all new cabinets are done instead. And it’s not just the big cost that ends up being 75-150% of the cost of new if you’re paying skilled labor. Changing from partial to full resets your clearances. You may have corners that won’t work or doors that bang into your appliances.
