It was a koi pond and now it is back to a swimming pool? I would just do a light stain/water proofing in a color and shade that appeals to you. It is a pretty room. I think the most important thing is a finish that will protect the wood. Any color will work.

Ohhh don’t get me started on the grout situation—there are huge stone walls inside and out that alllll need to be surface-grouted. I’ve never seen such an ugly grout job 😶
I’m going to try a light but not white solid stain so thank you for your suggestions—I really appreciate it

I'm with daisy, it's a natural space so go natural; either clear or light stain. Need, help, contact a designer. That's a space worthy of a proper vision.
