This would be a good time for you to switch your disposal to an air switch and have zero switched outlets!

I have a quad under my sink. Being under my sink, I wouldn't care if it
were actually two duplexes. I don't think it matters....assuming of
course you know what you're doing under there.... :)

I could get an air switch like https://insinkerator.emerson.com/en-us/shop/insinkerator/insinkerator-stsdualoutlet for the disposal but the dual outlet it provides is still switched (either one or the other is on/off from the switch). I could plug my disposal in one of the outlets and the faucet into the other. Whenever the disposal is on the faucet wouldn't have power though. Looking at the faucet at https://www.deltafaucet.com/kitchen/product/9159TV-KS-DST which says that it comes with a battery pack as well for when the power is out. Maybe this could actually work then? (e.g. faucet runs on battery power for the few seconds when the disposal is on)

Else I could wire in another outlet for a quad (and am comfortable doing so) but would prefer not to if possible.

Take a look to see if the faucet has a battery option. You May be able to get a converter. That way if your power goes out you will still be able to have running water.

Is the dishwasher outlet in a standard electrical box? If so, you could just swap out the single outlet for a duplex one. My dishwasher circuit breaker is 20 amp so I'd buy a 20-amp outlet.

It's a standard metal electrical box with one duplex outlet. Top plug switched for disposal and bottom switch for dishwasher on its own circuit.

One idea:

1. Remove the outlet cover and electrical outlets.
2. Remove a knock-out from a surface-mount 2-gang electrical box.
3. Pull the wires through the knock-out.
4. Attach the 2-gang box over the existing, in-wall electrical box.
5. Wire up two duplex outlets, one switched and the other unswitched.
6. Attach a cover over the four outlets.
