That's a lovely fixture. Couple of thoughts. By the look of it, it's more typically used as a dining room table fixture. The reason being it provides a glow type of light. See how the lamps face up, not down. Over an island, I would typically put something more like a pendant that put light on the work surface. Easier to see the vegetables you're chopping. The light manufacturer may may a pendant version of that fixture?

As far as how many, i would suggest three. Odd numbers help you balance the lights well, and the size of the fixture will need to be spread out. Of course, this depends on how much light the fixture puts out...

Agree about task lighting unless you have recessed lights as well. However, disagree on size -- if you have something this large, I wouldn't do more than two, because you want empty space at each end (usually 24") and some space in between, and I think three would get crowded. You can test using balloons or paper cutouts and hanging from strings from the ceiing.

Thanks to you both! Yes there will be recessed lighting but now I’m skeptical to use ambient lighting on the island. Makes sense to have a brighter task light, I never thought of that.
