Kitchen design help needed

Hi everyone - I'm ready to take the leap and redo my kitchen. At this point, I'm going to take out everything except the appliances and start over. However, I can't decide exactly what to do.

Here's some notes for each picture - any advice is appreciated!

Photo 1 (short wall) - No changes to design except to remove microwave and replace with either a full hood vent or one that would attach to the bottom of the upper cabinet.

Photo 2 (long wall) - Major change would be to move refrigerator out (more on that later) and replace with a full-depth cabinet to be a pantry/appliance garage (I don't have a pantry anywhere else). The refrigerator as-is doesn't open all the way and gets in the way of the back door.

Photo 3 (blank wall) - This was originally an eat-in breakfast area, which I don't need since there is a separate dining room. I'd like to move the refrigerator to this wall and add a small countertop space (probably butcher block). I thought about putting the pantry here but don't think there's enough room (the total wall is about 8 feet). I want to keep the window where it is - how close should I get to the window without blocking light?
