Old house smell

I am renovating an old timber frame home in upstate New York. I have just removed many years of drywall, furring, wood lath and plaster, and several types of insulation. I am now looking at an exposed wood frame, board roof sheathing, and floor boards. The smell has been pretty bad but seems to have gotten a little better after removing all of the wood lath that was moldy and vermin smelling. I still have to get all of the drywall and plaster out of the house. I intend to leave some of the timber framing exposed and unfinished.
Any suggestions what I can spray on everything that remains before I start building new construction to minimize odors? I was thinking a simple 50/50 bleach/water mix, but I'd hate for the bleach smell to linger. Baking soda?
