I just didup a batch the other day and have another batch to do tomorrow. Followed Ball's directions. Cleaned, snapped, blanched, cooled, dried then put them on wax paper in single layers on cookie sheets and froze. When frozen, I filled sandwich bags, got the air out of the, sealed then put the sandwich bags in a large freezer bag and pop in the freezer. No need to have two layers of freezer bags and it saves money. I did my diced celery the same way and other things I will do the same.

When I freeze beans I do them just like Madonna does. I usually can beans because I like them better canned, but I have a few things that i need the whole unbroken beans for and then I use the frozen ones.

I never spread them out to freeze. Just blanch, cool in ice water, drip and pack. Also sandwich bags packed in a freezer bag. Been using this technique for years.

I always flash freeze them on cookie sheets and then use my food saver to bag them afterwords. They'll last a year or more if vacuum sealed.

Well, I am kinda short on freezer space to lay them out first, but I might try it. I'm thinking if I dry them out after blanching in a salad spinner or on a towel it might be a good compromise. Gotta get these done quick before the tomatoes explode.

Updated/Edited to add that based on last night's dinner experience, hubs and I might just pig out on eating them fresh . . .
