Need help with overwintering my pepper plants

I've got bell peppers, jalapenos, banana peppers, poblanos, and santa fe grande. I have them in my garden boxes and I want to overwinter them this year. I've found people recommending that I use still warm compost before our first freeze and then cover that with mulch. I was planning on using some plastic sheeting to cover the peppers and then use Christmas lights to keep them warm during our tough days.

What are yalls thoughts? We live in Austin, out in the country, close to Manor.
