Kitchen backsplash. Help

Hi!
My husband and I live in Florida and have a home with an open great-room style...combination living/kitchen/dining area.
We want to install a backsplash, and I'm having a hard time choosing one. I know they're hard to take off once installed, so I want to choose the right one first! ;o)
Here are the basics:
cabinets - ivory with a thin taupe trim line around the perimeter of the cabinet doors
countertops - multi-colored granite. Background color is whitish/ivory and the pattern colors are greige, taupe, ivory, and a darker color that appears black upon first look. When take a closer look it has a dark blue/purple tone, but that's not obvious unless one really looks closely.
style - contemporary/coastal/ eclectic / transitional
flooring - dark brow
I plan to redecorate the accessory colors in these areas to blue.

This is the first time I've posted anything on Houzz, so I hope I can post pictures of what I have now and some tiles I'm considering.
I welcome your input for EVERYTHING you see in the pictures.

I definitely like the idea of keeping simple the main backsplash and having a pattern for the stove so if you want to update or change your mind it’s only a small area

I’ve seen some elaborate backsplash is where the entire area is a crazy color or pattern and it seems offputting

I second the "keep it simple" comment. Go with a white subway tile, using tile (like the blue one) that is trendy will date the kitchen 5 years from now. You can find different shades of white, (or finishes) to add character to the kitchen.
