You actually want to remove any flowers before they develop...so long before you would see any seed pods. The reason for this is to focus the plant's energy on the root system to generate more of the edible stalks and to recharge for next year's harvest.

Maybe it is the flower pod that I’m seeing rather than a seed pod.

More energy to plants and less "weeds" to pull from seeds growing
