Suggestions for kitchen layout

We were affected by the recent Texas storm and the base cabinets/countertop were removed due to water damage. We are looking to remodel the kitchen and update it to a more modern/ modern farmhouse/transitional look and also change the layout. I have a few different options for layout but each has some pros and cons so was looking for some advice/help on which option to use.

There is a low partition wall separating our kitchen from our dining area and I would like to take that wall down to open up the space between the kitchen and living area. I would also like to reduce the overall amount of wall cabinets along the counters but instead use full wall cabinetry where needed. The stove needs to be on the wall where it is existing and I am thinking of a new 36 inch range with oven and a vent hood above. I do not want to have any wall cabinets there, maybe just one floating shelf. Want to also incorporate a breakfast station area to house toaster oven, kettle, microwave etc. I am looking for a decent size pantry as well.

Here are a few layout options I have:

Option 1 – convert corner pantry to straight pantry and move the fridge from its current location to the opposite wall so it lines up with the pantry and is not visible from the living area. Where the fridge was, put in a full height cabinet or wall cabinets to counter to accommodate a breakfast station. This option reduces the size of the pantry and the space between the island and fridge seems tight. It also doesn’t give me a lot of storage. An alternate to this would be to close the entry to formal dining and make a bigger corner pantry (option 4) but was trying to avoid doing a corner pantry.

Option 2 – close the opening between the kitchen and formal dining and use it for pantry. Leave the fridge in its current location. Add a breakfast station right next to the pantry on one side and another built in buffet/hutch on the other side near the breakfast dining area.

Option 3- a simple L-shaped kitchen opening up to the living side and closing up the wall on the dining side to gain space for a built in or stand-alone buffet/hutch.

Need your advice and help on what seems to be the best layout and if there are any other suggestions/ideas you all may have. I am inspired by several of the designs on houzz and hoping the houzz community might be able to help! Thanks!
