usually the trim color will be used on the ceilings but in flat in main living areas and satin in rooms with humidity .

It depends on what you are doing with rest of the space, and what is your ceiling height.

The ceiling height is18- 20 feet at the top but 8 feet where it begins. The floors will be chocolate. The kitchen is at opposite end of prow, open with a peninsula. It has 8 foot ceiling with a loft above. The kitchen granite is Torrentino, cabinets chocolate. The fireplace stone and front of peninsula is dark brown and grey primarily. The entry is divided from the kitchen with a wall but can be seen from the great room, the floor will be a white/grey brushed marble.

You can also do it all the same color as the walls with that height on your ceilings

I am thinking the norm is white but wondering if white is too harsh for such a large ceiling. Usually in a room like this people put white washed wood.

I think that color might be too dark on the ceiling? Maybe a shade lighter like hot spring stones?

I think you have made some great choices so far but you have a lot of ceiling and I would choose the ceiling very carefully. The ceiling is an opportunity for an accent color... although I would make it just the slightest hint of color being that there is so much of it. I painted a large great room Pismo Dunes and added Simply White trim.. with a very pale blue ceiling.. it was stunning. I think the white ceiling is too stark for large area. I am attaching for you a color theme from the Color911 app to help you visualize colors with the Pismo Dunes that you can use. There are many color themes to choose from.. but I thought this might help you visualize the colors together. I hope it helps

with that much natural light that color would work fine or you can take that same color and cut it to 75%
