blind cab has the purpose of providing the blind section for the adjacent wall cabinet to butt to. as long as that adjacent double door cabinet gets use and you gain the pantry in this situation........[ normally the pantry would instead be another wall cab ]...I think you scored a net gain. The usable section of the blind cab along with a typical wall cabinet ...if you had done that would not be anywhere near the storage of the pantry set up. I'd consider the little alcove on the counter another bonus as you can push counter things back there when not in use. I wouldn't alter the cab. It just cant have storage use, being so awkward for you and even taller people...... but that seems okay, if you ask me.

If you can only reach the lower shelf, then just use that. You could put things you hardly ever use on the upper shelves using a step ladder.

I would seriously fill the other spaces iin all the other cabs drawers and pantry. retro fit inserts are not that cheap . its not clear from the picture what you lack in storage space to justify that kind of expense after what youve probably spent on everything. Maybe if you wait the correct approach will come to you if want to do something

There will be a refrigerator next to the pantryy. The right side of the refrigerator is near the edge of the doorway. The refrgerator is counter depth and has french doors. I doubt at this point we can afford to rethink the whole floor plan.

I had a similar layout in our last house and used the ” dead corner” for a decorative cookbook as well as fruit bowl. Pics make it look dark but it really wasn’t.
