With a push to open

I would change it out to a full length door.

Or get a cabinet door made full height to look like a pantry

I like the idea of making it look part of the cabinetry.

Open the area as much as you can.

Looking at the layout from your photos, I think your best option would be to use a slab front door and do a push to open. No moulding and paint it the same as the wall color.

If you put hideaway access, you could disguise more and brighten up that corner by adding art or really anything.

How about hanging a huge blackboard/magnectic board over it? Or hang a tapestry over it? You can remove the doorknob.
