It will happen so slowly you will not notice.

Yes, it will amber with time. You might slow it down with a UV-blocking finish, but it will continue to amber. You can plane it every few years to reveal a fresh surface. Or go with a non-natural (or at least a non-organic surface like rock) if you want it to stay the same. Or just enjoy the change.

All wood changes color over time. You age too.

I don't age. I have had these wrinkles and grey hair since I was born . . . well, at least as long as I can remember.

I have had a Bally Block island counter for 9 years & I don't notice that it has yellowed. They are a local company & I think they are part of Michigan Maple for a few years. It's still a very light top with some brown streaks.
