Cabinet Layout in a Kitchen for a Cook

Hi Everyone (again), We are building a new home and I want to make sure I've thought of everything for our kitchen. Specifically the layout of the cabinets. Our island is pretty small and will really only house the sink, cabinets under sink, dual recycling/garbage, dishwasher and three drawers. I have a cookbook collection and I'm debating taking out the 3 drawers to add book shelves at the end of the island. Thoughts? Will I miss the drawers?

Another small section of the kitchen houses the fridge. As of now, we have cabinets to the ceiling above the fride in two parts. The lower ones, right above the fridge, will have dividers for sheet pans etc. To the left of the fridge is counter space and normal upper and lower cabinets. As of now, I have the cabinet man building doors/cabinet on the counter to hide the coffee maker. This only gives me about 6" of counter space next to the fridge. Do I need more? Do I scrap the cabinet that hides the coffee and just leave it out?

The main long length of the kitchen will have a lot of counter space. Upper cabinets to the ceiling, some with glass. To the left and right of the range I have three drawers. I want each side to match and with 3 drawers I loose depth (for stock pots). So I've added pull out drawers in a few of the cabinets for large pot storge. Added pull out drawers for the pantry. Sorry for the very long post. Other thoughts/suggestions?
