There’s a really good keto cheesecake recipe on the internet which I have made several times. Those who eat it can't believe it's carb free. If you're interested I'll post a link when I get home.

Whole grain rolls and just a tiny one for her, make a mushroom, celery and onion stuffing for her.....consider chopping up some spaghetti squash to give it substance. Cranberry sauce with splenda, Cheese cake with a gound almond or pecan crust, sweetened with splenda, taters for the rest....she may have a tiny little portion.

The Best Keto Cheesecake

I made this again for a birthday at work today and everyone raved about it even though I overbaked it a little :-)

If you don't want to make one large enough to feed a battalion you can cut the recipe down- I usually do.

For an 8" springform pan, use

The whole base recipe (I actually omit the cinnamon as I used it the first time and we've decided we prefer it without)

2 8oz packages cream cheese

2/3 cup powdered sweetener (I use Equal as that's what we have here and Splenda upsets my innards)

2 large eggs (today's cake I used duck eggs as that's what I had)

2 1/2 oz sour cream (I do this by weight as she doesn't say "fluid ounces")

1/2 tablespoon vanilla

Bake time is shorter, I check after 20 minutes.

I usually top this with strawberries or frozen (fresh cost an arm and a leg here) raspberries in a thin layer of sugar free strawberry or raspberry jello.

amylou, I went to the site you sent and it said that it would be 45-60 grams of carbs for the meal!

Not being diabetic, I would cringe from that amount! They did have a few ideas to tone down the carbs.

Actually, the other Mom of the twins said this was a great site! There are ways to manipulate stuff!
