How to care for a potato plant

Hi there:
I had a few thriving potato plants up until a few weeks ago. I got them started using a couple of old spuds, and watered a couple times a week for about two months. But the plants never flowered, and eventually turned yellow and withered away. What could I have done wrong? Overwater? Underwater? Some kind of bacteria? I'm in southern California and got these started in early October 2021. Any tips you have are much appreciated!
