Unlike tomatoes, I haven't ever buried the stems of Peppers.... not the same plant. Tomatoes will actually grow more roots along the buried stem, but I've never heard that about peppers.

Looks like the practice is pretty much 50-50 :-) I've done it both ways with tomatoes and have yet to notice a significant difference in vigor or productivity one way or the other. YMMV

In principle you CAN grow roots from pepper stems, just not necessarily from everywhere on the stem like for tomatoes. That's why you can grow cuttings from peppers. The roots will usually emerge more reliably from just below the node where the leaves join the stem. So, in principle, you can cut off the lowest leaves and bury to just above that node. I suspect, however, that it isn't going to make much of a difference.

I generally bury pepper plants 1-2" below the existing soil line. As @daninthedirt (USDA 9a, HZ9, CentTX, Sunset z30, Cfa) mentioned, the stems will root somewhat, but nothing like the heavy full-length rooting seen in tomatoes. While I don't see any negative consequences of burying peppers a little deep, I suspect it doesn't contribute much additional vitality. It may, however, provide additional support & reduce the chances of the plants being tipped over as the peppers take on weight.

I do see quite a few branches emerge from the soil line, which contribute to the overall bushiness of the plants... but can't say for certain if that is caused by burying deep.
