It has iron in it. It’s normal behavior for iron to rust.

can the whole countertop rust then? im not thrilled with the rust color, but i suppose i will get used to it I guess I just didnt realize about the iron deposits

Typically not but there are no rules as it is a natural product and the rust is naturally occurring.

not a pro, but shouldn't the granite have been sealed? if iron isn't exposed to oxygen, then it shouldn't rust, right?

Sealer doesn’t deprive the stone of oxygen. 🙄 That is not encasing it it a plastic cube. That is very far from how sealer works. Sealer doesn’t make it waterproof, or stain proof. Much less oxygen proof.
