Hire a designer. You already have multiple issues. Matchy matchy is sterile, flat, and overrated as a design idea. You need some warmth in the cold cold Frozen mix. And no gray plastic floors. Ever.

Does your build company have a designer who can help you with selections? it is hard to pick things out in a vaccum and they may have ideas on combinations that work - i like kitchens with fewer finishes so i am a fan of a slab backsplash but it depends on the counters selected

Since you're already on Houzz, I would say try to look through a TON of kitchen photos. Pull the ones you love into an idea book and you will find a pattern. Once you know the basic colors of things you like you'll be able to make a better decision. My taste seems different than yours, I am doing a color backsplash in between whites so any mismatch is not so easily seen (I'm planning uppers to be white with Cambria Smithfield counter). So... the only advice I can give you is that it's impossible to completely match whites. I think if you're set on white/white/white, running the quartz up as backsplash is a decent idea.

Thanks M. Miller. I've been actually thinking of doing that, waiting to install the backsplash until after i move in, getting some samples in, and seeing what it actually looks like. But if I do solid slab, would be better I would think if they used the same slab. The floor will be natural, just a bit of graywash, I don't want it too honey, pine, or gold colored. It will still have warmth. The samples we're looking at look good with everyting else. Thanks for your feedback.

Verbo, thanks, there's no time for a designer, I'm at cutoffs this week. There is a designer helping me already with the builder but....... About matching, I have lots of photos where the cabinets and the walls were done in the same paint color and they look amazing. The wide plank luxury vnyl looks AND FEELS like real wood. You wouldn't know the difference if you saw them. They're nicer than the porcelain tile wood looks. They don't look like plastic floors. I wouldn't buy it if it did. I can't buy real wood floors, they don't last in the desert plus too much maintenance, hard to clean.

la-la girl thanks a bunch. Yeah, there is a designer through the builder helping me but I'm not still confused!

Here's a picture of one that matches walls, ceilings, cabinets and looks amazing and one where the cabinets are a brighter white that just looks mismatched.

ps. I actually have a certificate from the Interior Designers Institute out here in Newport but you'd never know it. Obviously it wasn't enough education, at least for me! I feel clueless. haha
