We just bought a new house, and we want to put up some paint right away! I need help on a few things:

The first thing I want to do is paint the bottom half of the walls below the trim all white. 1) Any suggestions of a good white paint for this job? 2) What finish should we use? I know you are supposed to do a semi-gloss on trim, but I want it to be the same color as the walls, and I DONT want the walls semi gloss. Is there a finish I can use on the walls AND the trim so we are only using one paint?
Good "Greige" paint?
Any suggestions on a good greige for the hallway, living room and kitchen? I'd like to paint above the white a good neutral with grey tones. The kitchen cabinets and floors are a warm wood, so I was thinking the "greige" would do well. I've posted pictures of the space.

Other changes we are making- taking down the brass lighting fixtures and door knobs and hinges and replacing with oil rubbed bronze. We will also be taking down the wallpaper and changing out the knobs in the kitchen.
