Wow, I've never heard of a Jillmo weight or an airlock system. They look pretty cool. lol! I did a pepper ferment once, but the peppers were minced and didn't require a weight. In this case, are you saying the Jillmo gadget is too light-weight to keep the veggies down under the brine? or are the veggies slipping out from around the Jillmo gadget?

Good question- veggies are slipping out from around the glass weight, but only in the quart jar. I think I'll transfer the salsa in the quart jar into two pint jars and see if that works better. Also, the garlic smell is much stronger than I bargained for LOL. I didn't realize I'd be smelling that for 2-3 weeks! It's not that something has spoiled - I just made the ferment yesterday.

re the odor, I wonder if it's because the airlock makes it anaerobic? This assumes that you used liquid in the airlocks....

I think it's normal to smell what you're fermenting. Your house will smell much better when you ferment strawberries!
