You'll use ONE 12 inch stem. Your ceilings are only 8' and you want about 36 inches bottom of shade to island top.

In the large ( 13" d ) : ( 18 inches open at both ends ) 18/pendant/ 36/pendant/18

They are a solid.....not glass or open lantern. Two is just fine over the eight feet.

Three is fine too. 15/13/40 space/13/15 open at each end ,

I like the idea of two.
I think you should go bigger.
I also don’t think I’d do solid brass / gold. Too much.
I’d find something softer.

Unless it isn’t solid. Like, has spacing in between… lantern style…

You have to pay attention to specs!. Virtually nothing posted above will work in your kitchen. All too LONG. too big . It's not just width, it is length, it is mounting attachment, stems or chain , and if you know you have an island 36 to floor, and know you need that to hang with 36 clear inches above that island to the bottom of the of the pendant??

Math: !!! 96 ceiling minus 72 inches is exactly 24 inches of Mounting attachment, plus chain or stem, and the fixture height ITSELF.

I would recommend blowing up balloons to size you want with a weight in them and taping to ceiling to get spacing and size right. We did this and it helped us make our decision. I really like pendants that are glass or see through in some way so you see beyond them to the hood and cabinets etc
