Can you post a picture of the windows when the existing curtains are open so we can see what the windows look like?

If you need privacy then Roman shades will not be a good choice since they will be lowered most of the time. I would do side panels with semi transparent roller blinds or solar shades so you get some light along with privacy.

Privacy for all-day but want the natural light.

Kitchen is next to dining

We agree with others on this post, you have lots of windows and they are large - draperies will look best. Maybe consider doing panels with sheers so you have better light control. (I.E you are able to close or open both or you may opt to pull back panels during the day but leave sheers for filtered light rather than a harsh light.

Another option would be to do panels and instead of sheers. You might consider roller shades for light/temperature control and privacy. Hunter Douglas has some stunning options for custom roller shades. Choosing draperies with a print or pattern rather than a solid or texture is also a great way to add depth and color to your space.

Pretty house. If possible, I’d wait until you have the new furniture and decor in (or chosen), and know exactly what design direction you’re going in, before deciding.

You can see the kitchen and the living room from this dining space.

Window treatments in the house are velvet curtains in the master bedroom. Linen/cotton curtains in the spare room.

Drapery but you need rods that travers, or at least rods that allow you to pull the panels with a baton, and pleated drapery panels.

Pleated makes everything better! And closer to the ceiling. I had a feeling they were too low.

In reality you could do no window treatments, but if you feel you'd like them you could easily do drapes or roman shades. Below are three different examples of dining rooms with each option which we think might really help you with your dilemma.
