Yes, I absolutely agree with @User! We used Rubio on solid maple in 2015. Upkeep is horrendous! Please save yourself the aggravation!

I would suggest Centurion's water based floor finish. I think this is it. But be sure to contact them to verify.

Thanks Mary Elizabeth (& Creative Cabinets) - we've used Rubio on furniture for years and love it - even on our DR table & desk and both have held up extremely well - I realize that it likely doesn't take the same amount of wear as flooring but I feel pretty confident in using the product... however will consider your comments (& talk to our contractor as well) & do appreciate them. @Kristen Wenger, oh, I understand the product for finishing wood. I have switched to Osmo, as it has a MUCH better finish compared to the Rubio, (IMO). We will be using it on an antique library ladder, and a knotty alder mantel. Not at all worried that it will hold up.

We are also presently researching products that can be applied over the Rubio (without stripping). Our floors are just not "liveable", sorry to say.

I think your attempt to hide the yellow tones (or pretend there's gray) is going to leave you with a floor that feels pink. Embrace the tone of the oak, don't run from it.

I'm having the same considerations with red oak. I was considering Rubio but I hear so many negative stories it seems risky. I don't like the pink or yellowing that happens wth red oak, I may do a water based poly and go medium brown. Maybe boring but at least I know what I'll get. @Mary Elizabeth what do you like about the Centurion vs. competitors?

Just an update - we refinished our red oak floors with Rubio in Natural finish over a year ago and we are loving the look & feel of the floors. Upkeep has not been an issue and we've got 3 kids & a dog ... very positive experience for us even though I know there are mixed reviews.
