kitchen design - pendant lights where to place

We are doing a renovation of our kitchen in our 120 year old home and have the initial design. A few things I would love to get your point of view on:

Ceilings are 10’ high so cabinets will not go to ceiling
We have to work around a load bearing pillar as shown in the photo.
Sink is not drawn in but would be centered in the island
The kitchen is open to our living room and dining room
Small room with shelves is a wall in butlers pantry with countertops and shelves. Small appliances (microwave, coffee maker, toaster) will be in this room along with a small bar sink
Color scheme for kitchen will be hard wood floors, wood island, painted cabinets along the wall with the stove (see pic of finishes)

Questions;

  1. How many pendant lights over the island?
  2. Stainless steel hood or a plaster hood? Also would you do any lighting on the walls next to the hood? Would shelves be better?
