The OP isn't asking whether or not to keep the brick as is. They've already decided they want to cover it. Which I agree. If you look closely at the top of the house there are splotches of different red. There is nothing precious or special about this brick. Jill, I wish I had a recommended product for you. I just wanted to support you in your decision.

While you're at it, how about removing the lick-and-stick fake stone veneer and parging the foundation?

It appears that your house originally had a roof over the front porch. I can see the outline of it in your pictures. If it were my house, I would try to put that porch back. Its a very nice thing to have, when the weather is bad, and would also improve the look of your house for curb appeal. I have to agree with Charles Ross Homes, that the fake stone that doesnt even look good, is your biggest problem, and should be removed. I would definite leave all the brick alone.
