Can anyone testify to using a 48in Five Star for sourdough baking?

I’m a sourdough micro baker just getting started. Baking for my local Farmers Market from my home. Have a (seemingly) great opportunity to buy a used 48 in Five Star Range with double ovens. Not sure of the age yet, but seems to be in pretty good condition.

Any bakers out there have one of these and can tell me what their experience has been?

Collect up a bunch of cast iron dutch ovens to bake your bread in and any oven will work fine-- and your bread will come out better as well! Short of a real steam injection commercial oven the dutch oven method is by far the best I've found for baking sourdough. The cast iron completely evens out any temperature fluctuations you might have in the oven. You do want sturdy shelves in the oven if you load it with 3-4 cast iron dutch ovens.
