Looks like peach to me, with a bit of peach leaf curl. But I don't know Texan plants so you may have something there which I'm ignorant of.

Btw Peach is a species of Prunus, so 'or' is redundant.

Peach trees along access routes can be from discarded pits. This can also account for a shrubby habit. Because no training by a production nursery was involved.
