I don't have dimensions, so a more specific layout can't be done, but this is more conceptual and I think will give you a nice kitchen:

Have about 26-30" deep of storage and bench seating on the left of the mudroom. The right wall can be for hooks for coats and bags. Put the entrance tot the kitchen at the far end so you can do a nice L-shape. You could take out the pantry and open the wall to the dining room and have a nice island in there - hard to say with out seeing it and knowing the dimensions of it. .

You could also do the opposite:

Have the mudroom by the bathroom - it probably could be longer if you get rid of the pantry and extend the wall on each side a ft or 2. On the left, you could have a whole wall of 12" deep pantries ( about 6 ft worth! ) You could put a small bistro table maybe even add a coffee bar. Or if you open the wall to the dining room, you could extend a peninsula out from the 12" deep pantries to have some seating and a buffet area. You may be able to redo that pantry into a coat closet.

Lots of options! Of course , load wall situations may come into play as to what can be done and if there needs to be any headers added or made larger. An architect will help with all of that.
