I have been told that once blooming roses should be pruned in the Summer, only after they stop blooming. I don't always manage to do that in my garden. In my experience, if you leave once bloomers alone which did NOT get pruned the previous Summer, they will bloom well again the next Spring regardless - just a bit messier. This happened in my garden with banksia lutea (Yellow Lady Bank's rose), and also 'Cl American Beauty' (1909 - not to be confused with a HT and a HP with very similar names which are repeat bloomers).

One year my gardener did prune one of my once bloomers hard in the late Winter, (I forget which one), and it barely managed to produce a few blooms in the following Spring. So, if was mine, I would leave it alone and see what it does in the Spring.

Having said that, I do not grow Centifolias, so hopefully someone on here who does will give you more or better advice.

What you cut off your Centifolia now is likely what WOULD flower at the appropriate time where you are. If you want maximum bloom, take those long laterals which flowered last year, "self peg" them by bending them around to form hoops or circles and tie them back to themselves. The plant should respond by pushing short flower stems from the hoops of last year's wood, providing you with nearly wreathes of blooms. Then, after it finishes, you can prune those laterals back to the length you desire. Yes, they will grow longer over the summer, but any shortening needing done after then should be done in fall so all of the remaining growth should be of sufficient maturity to provide you the flowers you want for the following year. "Pegging" is literally like training a climber, only not limited to only two dimensions and not solely against a wall, fence or trellis, though it can be.
