Straight does not look goofy for the floor. Why do you think that?

It is a cleaner look, as you don't end up with the stair-step look of 1/2 off-set.

Straight in my master bath floor. Shower is the same.

Be careful. Some tile should not be installed in brick pattern, as it's not straight enough to avoid lippage. The requirements should be printed on the box the tile comes in or in manufacturer's instructions.

Yes, finish of the tiles is important for the function, my porcelain floor tiles are honed/matte and the porcelain wall tiles are polished/glossy.

I have never had an issue installing 12x24 tile in a brick pattern, but they have been good quality tile, and more importantly, I used really good tile installers.

Large format floors can look great in a straight herringbone pattern. It keeps the joints from lining up and IMO renders a more seamless look. Try the layout and see what you think.
