Do you have lights inside the built ins?

I would put interior lights inside the built ins.

Yes, one bay per light will look intentionally designed and just right. Put them on a dimmer switch.

I'd first concentrate on what is in the built in that needs a highlight.

Do a much more organized shelving arrangement, perhaps some art in the middle.?

What you don't need is to highlight the dust that does tend to show on black built ins.

I'd be inclined to ONE long linear in the middle, and a removal of the two recessed. Again? First a think through of why: )

Interior lighting only works if run down the long sides, or the shelves are glass. Even then....it doesn't penetrate well.

Question- what size lights should we get? The smaller bays are 32” wide and the center is 48” wide. I read somewhere to go with 1/3-1/2 the width
The ones I really like come in 18 and 24 inch length, but not 12
There is a similar one that comes in 12, 18, 24 inches wide.

These canless, recessed wall washers are an interesting solution. They're available in several lengths and color temperatures. You could install them in the ceiling using the existing wiring, remove the old recessed lights, and patch the holes.
