How to make this look happen

I am hoping to create this look for our porch fireplace. This is Casa Di Sassi Bianco Blend. This photo is from their website. I have this stone and am trying to figure out the mortar issue. How far apart to ask mason for, color of mortar, and fill. This doesn't seem like a rake or an overgrout. I am a novice and would love some help!
