Overwintering Temperate Shrubs

I have a few potted shrubs that are more suited to a warmer climate than mine (dwarf hydrangeas, fig, and French tarragon), and read that they can be overwintered in a garage or shed. Since these go dormant and send up new shoots in the spring, do they have to receive sunlight? Both my garage and shed do not get any natural light. So, can they be overwintered in the dark? Also, how often will I need to water them, if at all?
