White ceiling fans will blend in more with the ceiling, while a dark fan will stand out....I would go with an antique style fan with a light on it so you can see what you are eating! Take a look at this one from Kichler

Your new ceiling sounds lovely! Please post pictures :) Take a look at these examples that would do quite nicely against a white tin ceiling in an old farmhouse:

If you don't require a light kit, this one is very simple and straightforward. The white will blend in with your ceiling:


A dark blade would look striking against the white ceiling and actually force the visitor to look up at your ceiling, which you may want to encourage, as the eye would immediately pick up the contrast when entering the room:


If your ceiling has a heavy embossed pattern, as many tin ceiling tiles do, you might want to play with that in the fan to encourage the two to mingle:


And finally, if you are after a metallic color in the kitchen, have it match whichever metallic color is most prevalent, stainless, brushed nickel, aged bronze, etc....this one in oil rubbed bronze:

Never thought about the contrast drawing attention up. Will post pics when it's all done.
