Wolf 60" range - french top vs griddle

Hi - I am installing a Wolf 60" range in a second home in Tahoe. I love cooking and will use this range a lot - curious if anyone has thoughts on the french top vs. the griddle. I wish there was an option to have 8 burners and a smaller griddle, but it only comes with a double griddle or french top. What do you really use a french top for? I don't currently have one and not sure I will use it. I heard it takes a long time (1/2 hr) to heat up. Although I may use the griddle, the clean up (I have seen the you tube videos) seems like a total pain. Would love some input, thanks!!!

I'd find it enlightening to hear your work flow when using a 60" range. I have a lot to learn.

For me a Griddle is an easy choice. A good thermostatic Griddle can function somewhat as a French Top, a French Top cannot function as a Griddle.

I do find it interesting that you chose a 60" and then what to use it for rather than figuring out what you need/want and letting that determine the size of the range.
